Really great recipe. I was worried the mash would taste too sweet but it's very subtle. unless I'm cooking for a large party, I would cut this recipe down in half. I have a massive pot of the filling now. I misread the instructions and mixed the beans with the mash before adding the spices but it works fine together. I'll definitely make this again and for when company is over!

I love this idea- sweet potatoes in a burrito sounds weird at first, but it is SO delicious. I make it with black beans- personal preference. Sometimes, instead of rolling these up into flour tortillas, I'll use corn tortillas and make little pies with them. I mash the sweet potatoes, then I layer one corn tortilla with sweet potato, black beans and cheese, put another tortilla on top and layer it again. I then bake them at 425 for 7-8 mins until they're a bit crispy. And either way, I always serve this with fresh avocado.

We thought this was not very good. The taste was fine it was just the texture. There wasn't enough difference between the mushy beans and the mushy sweet potatoes. Was not a big hit in our household.

Changed it put a bit but the concept is awesome. 1 can of black beans, heated with 1 garlic clove, pinch of curry powder and ground cumin and lots of chili flakes. 3 big sweet potatoes boiled with a clove of garlic, salt, pepper, paprika and mashed. Made about 7 or 8 good sized burritos, enough for 3 or 4 people. To assemble: I put a layer of beans, a layer of potatoes and some cheese on top. Folded it and placed on a lightly oiled sheet pan. Baked at 350 for about 10 minutes. I served it with sour cream, cilantro and a homemade pineapple salsa! Yuuummyy.

It works perfectly in the oven from frozen. 30 mins wrapped in foil at 350, them 15 mins unwrapped to crisp them up. Better than when I first made them!

These are awesome! I have made them twice now and my 8yr. old daughter was the one who requested them again. The only 2 things I did differently from the recipe was cut the water in 1/2 to just 1 cup!

these were okay...maybe since I eat meat I wasn't to impressed with the flavor. Almost was like eating baby food in a burrito...But I say give it a wurl you may like how it turns out.

I scaled the recipe for 5 servings and the proportions were actually perfect. Instead of kidney beans, I used half red kidney beans and half black beans. There wasn't any heat though (which was fine for my son), so I added some jalapenos to my own. Served with green onions and sour cream, with a side of Mexican rice.

These are outstanding! The recipe is great as written, but these burritos also turn out delicious when the ingredients are switched up (ex: mix in black or pinto beans with the kidney beans). I like to season the sweet potatoes with a bit of cumin, cayenne and chili powder. I often make big batches of these and freeze them--heat in the microwave for about 90 seconds on both sides.

I feel on the outside right now but I thought these were okay. I did scale the recipe down to 4 and made 5 burritos. It was the bean mixture that I didn't like. The cumin was too powerful. I will tell my vegetarian sis to try them.

These are the best burritos ever. I skip a couple of steps by simply mashing black beans with mustard and soy sauce, then stir in mashed yams and a couple of handfuls of fresh cilantro.

These are delicious! I mash up the kidney beans in the food processor and add the sweet potatoes to the bean mixture to make it easier. I always add a big handful of cilantro, which I think makes this much tastier.

My husband and I were really excited about this recipe, unfortunately it fell a little flat. The concept is fantastic, but the recipe needs a little tweaking. We've experimented with some different herb combinations and have tried feta, cottage, and mozzarella cheeses. I would recommend any seasoning or addition that would play up on the savory flavor profiles.
