Maybe it should be only 4 because I didn't use kidney beans, but then again that might be good too. Like many others, I was a little hesitant about the recipe, but glad I got over it. These burritos are yummy, yummy, yummy. I wanted to take some to work to share with co-workers and my husband doesn't want them to leave the house. I don't know how you could call these bland, I have a diminished sense of smell/taste and these have a wonderful mixture of flavors.

Not the best. I used a little more spice than called for & they were still bland. I had such high hopes for these, but they really weren't addictive at all. Just okay.

Used black beans instead of kidney beans. Did not pre-warm the tortillas. After assembling them, I placed them in a 9X13 pan with extra cheese on top. Wonderful. Whole lunch room was jealous.

Very delicious! I made this as a birthday dinner for my meat eating husband and he loved it. I used kidney beans and black beans and it turned out wonderfully. Strongly recommend this dish. Can't wait to make it for dinner for our son when he can start eating solids.

Surprisingly very delicious. My meat eating husband liked it as well. My sister came over and took a bowl home with her. I used Kidney and Garbanzo beans because that's what I had on hand.

I only tried this recipe because of the great reviews it received...if it were just left to the ingredients, I would've skipped over it. It was absolutely delicious! All of my kids and their friends loved them too. I'll definately make these again.

This recipe was excellent!! It sounded so weird at first but i had at least 5 other people try it, and all loved it. This included a 1 year old and his mom who "won't eat anything healthy"!! Our grocery stores don't have sweet potatoes so I substituted yams and it seemed like it'd be the same. I did freeze some, and they can come right out of the freezer and into the microwave....perfect!!!

We liked this so much more than we thought we would. The way the sweet potatoes, the cheese and the beans all go together is quite yummy. Also very healthy and a great vegetarian option.

Great recipe! Filling and flavourful. I thought that the texture may be mushy with the sweet potatos and beans, but it was not. The only change I made was black beans instead of kidney and I did not mash the beans. Will make again.

I was hesitant to try this recipe, but it exceeded my expectations! I used black beans because I like the flavor better, and omitted the soy sauce and mustard. The flavor was great, and my three year old loved it! I will definitely make this again!

this is seriously the strangest recipe i have ever made...it's just strange that these ingredients are together in this recipe. i was really hoping this would be a good one to get my kids to eat more veggies, but it didnt go over very well. the flavor was fine - nothing exciting and just kinda odd. my husband said "interesting". adding water to it really confused me as to why it was necessary - i added only half the amount indicated. i would prefer not having the filling so loose and it would be better if it was thicker in the burrito and maybe less likely to squoosh out so much...so dont add water if thats your preference too. i used refried black beans so there was no mashing and it was extremely easy to prepare.

I didn't use the soy sauce, but added a 1/2 tsp. sea salt. I also didn't use the called for prepared mustard. I used a pre-mix seasoning pack (all natural) that I already had on-hand, instead of combining the spices myself. I added extra onion (sauteed), and used longhorn cheddar and jalapeno Jack cheddar combined. Topped with picante sauce, chopped tomatoes, and shredded lettuce. Put out bowls of chopped chives, jalapeno's and sour cream on the table for serving. Very yummy! (Also followed the advice of other reviewers and used black beans, not kidney beans).

How many sweet potatoes are you supposed to buy for this recipe? It says 4 cups cooked and mashed, but I don't know how many that whole potatoes that is.

We love these burritos! My changes: I always used black beans and whole spelt tortillas. YUM! If you're looking for alternative ways to cook with sweet potatoes, try these! tonight! edit: These can have a mushy texture so I came up with a "corn relish" to add to the burrito to add some crunch to it. It's a great addition to these burritos!!! 1/4 c frozen corn, 2-3 TBSP diced minced onion, 3 TBSP diced bell pepper, 1 1/2 TBSP honey, glug of balsamic vinegar, salt & pepper. Combine in a bowl, let sit while you make the burrito filling, then add to burrito before you wrap it up.

I really enjoyed this recipe and followed the directions as is. I was rather concerned though with the bean mixture when I added in the water. Mine was quite runny and didn't start to thicken at all until I added in the spices. Even then, it was still runnier than I would have liked. Next time I would reduce the water slightly, add in some peppers and/or other veggies. I'd also bake a little longer so that the tortilla gets a little crispier and possibly add more amounts of spice. All in all though, it was great and I'll do it again for sure.
