I loved this recipe. I ended up having to use boxed sweet potatoes only because I did not have the spices I needed, but I figured they would be in the ones from the box. I also mixed the sweet potatoes and bean mixture together at the end. These came out great to me, I will make again, and next time I will do it with the spices and real sweet potates, im sure it will be better. Also, it goes great with sour cream, if you like it that is. Yum!

I used canned sweet potatoes, drained. For me it made the burritos way too sweet. Other than that, I loved the mix of flavors. I chopped and dropped in the pan so my garlic didn't have a chance to burn and the water had a chance to evaporate and thicken the mix. I just mashed everything with a wooden spoon in the pan. I also added the potatoes to the bean mixture. I'll probably try this again and bake/boil the potatoes.

oh dear, these really are good! i recommend going heavy on the bean mix (i used black beans). i also served with pineapple salsa, and sour cream. yummy and healthy. if you even think this is something you might like, you will probably love it.

This recipe is one of my and my husband's favorite vegetarian burritos. They are fairly easy to make, healthy, and wonderfully delicious. Have made them many times. Be careful not to add too much water or you will need to let it simmer off a while or add something like masa to thicken it. We like to make the whole batch and wrap them individually, keeping them in the fridge for an instant, yummy lunch!

only added about half the water and instead used a can of black beans with the juice. didn't have cayenne pepper so I used Frank's Red Hot Sauce which is made with cayenne pepper and it was awesome- added a spicy flavorful touch. Wasn't sure why they needed to bake so long though.. 8 minutes was enough and made the tortillas crispy- thought I would've liked them better soft at first but the crispiness was pretty good. These burritos were absolutely amazing my boyfriend and I loved them so much and can't wait to make them again.. so healthy and good you can't beat it. Thanks for the recipe- verrry addictive.

I wouldn't make these again. The bean mix was good, but adding the sweet potatoes ruined it. I'm not too sure why the recipe asks for so much water - you only need a bit. The amount of cumin in the recipe is also excessive. Bland and boring.

The bean mixture was delicious and I will definitely be using it again....but the sweet potato seemed a bit out of place and didn´t necessarily blend well with the spicy beans.

I used black beans and whole wheat tortillas. They were totally addictive, and froze and reheated just like a regular frozen burrito. Yummy yummy. I will definitely be making these again.

I think that this is a very good base recipe, something that people could add anything to and it would still taste pretty good. I made a few adaptions myself. I used vegetable stock instead of water, i used far less chili powder, and i added a big handful or fresh chopped cilantro and mixed in it before serving. Listen to reccomendations: Sour cream compliments it very well.

The sweet potatoes and kidney bean mixture go well together. However, there just seemed to be something missing for me! Only one change to the recipe: I omitted the water as the beans seemed to retain some of the liquid from the can. Not quite "addictive" for me but the recipe is worth a try for a unique, week night supper!

Maybe it should be only 4 because I didn't use kidney beans, but then again that might be good too. Like many others, I was a little hesitant about the recipe, but glad I got over it. These burritos are yummy, yummy, yummy. I wanted to take some to work to share with co-workers and my husband doesn't want them to leave the house. I don't know how you could call these bland, I have a diminished sense of smell/taste and these have a wonderful mixture of flavors.

Used black beans instead of kidney beans. Did not pre-warm the tortillas. After assembling them, I placed them in a 9X13 pan with extra cheese on top. Wonderful. Whole lunch room was jealous.

Very delicious! I made this as a birthday dinner for my meat eating husband and he loved it. I used kidney beans and black beans and it turned out wonderfully. Strongly recommend this dish. Can't wait to make it for dinner for our son when he can start eating solids.

Surprisingly very delicious. My meat eating husband liked it as well. My sister came over and took a bowl home with her. I used Kidney and Garbanzo beans because that's what I had on hand.

I only tried this recipe because of the great reviews it received...if it were just left to the ingredients, I would've skipped over it. It was absolutely delicious! All of my kids and their friends loved them too. I'll definately make these again.
