I was hesitant to make these b/c the recipe calls for an interesting blend of ingredients (soy sauce and yellow mustard in a burrito??). however, I am glad I tried it. The bean mixture is actually VERY good. I think I went a little heavy on the sweet potato b/c mine turned out a tad too sweet to be GREAT but they are good, especially when topped with salsa and sour cream. I just made mine and haven't frozen or reheated any yet so I can't comment on that but if they are as easy to freeze and reheat as the other reviewers say, this is a terribly EASY make ahead meal for those times you are short on time. I think I will try this recipe again sometime only I will go a bit easier on the sweet potatoes and heavier on the bean mixture (I had a LOT of the bean mixture left over so I'm sure I didn't use enough in the burritos. I'll most likely top the burritos with the extra when I reheat them tomorrow.) If I could,I would have given this a 3.5 star rating b/c it is better than average but unfortunately that is not an option and I have to err on the side of 3 due to the slight over sweetness.

I've made this recipe at least 5 times and it always turns out great. I usually use black beans because I always have them but either one is a good choice. Don't skip the mustard, it really makes the flavor great!

These are so good...I made as written and as others have said the most difficult part is mashing the beans. But they were so worth it! My husband was very skeptical but he loved them and asked me to make another batch so he could take them for lunches. I will definitely use again and again. Thank you!

Very unique but delicious! The sweetness from the potatoes is unexpected, but works well with the bean mixture. The only addition I made was to add sour cream to the top. Very good, will make again for sure! Thanks!

I was highly skeptical - it seems like such an unusual combination of ingredients. I made them with black beans instead of kidney beans, and they were quite tasty! I enjoyed the sweetness of the potato contrasted with the spices.

awesome!!! Thank you, I love these. I use scallions instead of onions. I cook dried kidney beans in the pressure cooker, then add all the ingredients together.

These were really good! I took the advice of other reviewers and used black beans instead of kidney. I also mashed them before putting them in the pan, which seemed much easier. I'm giving this a 4 only because 2 cups of water is way too much! It was so runny I had to use a slotted spoon to save the actual bean mixture. Luckily it still turned out delicious. I even put the leftovers over chips (I ran out of tortillas) and it tasted great. I'll definitely make these again.

Like the others, I added one can of black beans in with the two of kidney. I also omitted the second cup of water because I found the bean filling runny with just one cup of water. They were fantastic!

Convinced myself to try it and glad I did. This recipe was a hit with the whole family. Most of the boys had seconds. I couldn't bring myself to add the water to the bean mixture. Not sure what the point was. It seemed like a mistake in the recipe. Anyway it was great without it. I also backed off about 30% on the cumin and chili powder and it was just right for us. We're not vegetarians but it's nice to know that we could be! 8-)

Excellent! As if these didn't have enough fiber as stated, I used multi-grain tortillas, but other than that followed recipe exactly. Very tasty and filling! Used a potato masher to mash the kidney beans, but I purposely left a few of them whole for texture. Will try black beans next time as I think they'll work well, too! Thanks for sharing!

I tried this recipe several months ago and have made it twice since then. Love the sweet potato and kidney bean combo. I eat a lot of black beans so the the kidney beans were a nice change from the ordinary.

I liked it, but my boyfriend said it was "okay." I prefered I just put the bean mixture (I used black beans) and tomatoes with cheese and skip the sweet potatoes. I'm always looking for great sweet potato recipes but this one was less than awesome.

I was very skeptical about making these but they turned out wonderfully! The only thing I changed was to halve the water, but I used all the other ingredients as written. Served with sour cream and melted cheese on top, they made a wonderful vegetarian change to our usual burritos.
