I have had this in my box for some time and I finally made it! I am so glad I did! I used blackbeans instead of pinto and only mashed them slightly. We sreved these with sour cream and the whole family loved them! Great flavor!

These were good. I would say 3 stars, but my boyfriend thought they were super duper, so I pushed it up to 4 stars based on that. =) I'll try this again, and possibly tweak the recipe a bit to add a bit more flavor. Thanks for sharing!

I made this with a 16oz bag of black beans (cooked on stove per directions) and then I put the beans in a food processor before mixing with the garlic/onion mixture. These are actually quite good! Will be making again!

Unbelievably good! After sauteing the onions and garlic I put them in the blender with the kidney beans and broth. I scaled the recipe back to 4 servings so I used one 14oz can of beans, a small onion and a big garlic clove. You can't have too much sweet potatoe with these. Next time I'd leave out the cayenne, but we didn't think it was overly spicy. Nice blend of spicy/sweet- my favorite combo of flavors.

These are so good! I added a little extra cayenne to satisfy my spice craving and served with a simple salad. This makes a lot. Once I had a lot left over and took the left overs to a party and cut the burritos into bite size pieces for the guests. They were gone in no time.

Weirdly awesome. I used black beans instead of kidney beans, and it was so tasty I probably won't ever try kidney beans. One of these is very filling.

These were okay, the beans were definitely the best part. I would make these again with more cheese next time.

I love a good burrito and am always looking for a new variation but this recipe really did not do it for me. The flavors just did not mesh well together at all. Sweet potatoes do not go with savory black beans and cheese. I did like the black bean part of hte recipe though and will use that again in other burritos.

These things are awesome! My husband can't get enough of these! He had a great idea to make them in enchiladas. So I baked them in green enchilada sauce and covered in cheese. Served with sourcream. That was the bomb!!!

It took me awhile to get the nerve up to try these, but I was hooked after my first bite! The spices mixed with the sweet potato make a perfect fall meal! Thank you for sharing this recipe!!

We really enjoyed this recipe. I didn't read it carefully enough and combined the beans with the potato and it came out very well. I nuked the potatos with the skins on, pureed them in the cuisinart and then added the beans to the cuisinart and buzzed them a bit, Made the work very easy. Thanks a lot.

I tried this after reading a review. My family rated it about 3 1/2 but I added half a star for nutrition and innovation! It's a very acceptable recipe for a non-meat meal. And I thought it very tasty if not addictive. I did spray the outside of the tortilla with vegetable spray to give it a little crunch.

I wouldn't call this addictive, but they were ok. I added more spices, corn, salsa and of course cilantro. I also used 2% cheddar cheese. It is a healthy, quick and easy meal and I probably will make it again.

Didn't turn out too good for me. Too much carbs and not enough veggies. And the texture reminded me of babyfood.

I have to say...after reading all the great reviews about this...I was a little disappointed. I followed the directions exactly, but I found the recipe a little too bland and chunky. Although, the addition of some sour cream did help...
