My mom has been making this since I was a kid. The only thing she adds is a slice of bacon for each squash half. The salty-smokey flavor of the bacon gives a great kick to the super sweet dish. Trust me, if you don't mind eating meat it's a GREAT addition.

i mix dry oatmeal and brown sugar and then pour butter on top. it tastes great.

Very good! I used a cinnamon sugar mixture after making another recipe for dessert as well as the brown sugar. It was so good. My 5 year old gobbled it up. We wish we would have put more of the sweet mixture on top, even though that makes it a little less healthy. Will make this often.

This was so good! First time we have had acorn squash but it won't be the last! I read the reviews and cut a lot of the steps out and just cooked them about 1 hour with the butter/sugar mixture. Added nutmeg/cinnamon and topped with pecons when done! Wonderful!! Thank you!

This is how we've cooked squash in my family for over 50 years, but we do add a tsp of vanilla along with the butter and brown sugar before we bake it. Then when it is done, we sprinkle a dash of nutmeg over the squash. It looks beautiful and tastes delicious!

This was a tasty way to try a new fall vegetable. Probably something I would only have once or twice a season, but I'm glad I tried it (and my husband even ate it, who is a picky veggie eater). Here are the changes I made based on other reviews/recipes: Added about 1/4 cup of water to the bottom of a glass pan (select a pan that is a nice fit for your acorn), cut the acorn in half and then cut off a small piece of the bottom so they would sit level. Filled their cavities with the recommended butter and brown sugar, but then also added a few dashes of nutmeg and cinnamon. Cooked them open faced in the oven for 45 minutes. When I pulled them out, I sprinkled chopped pecans inside. In case you've never tried these before - the idea then is to use a spoon to mix the veg. flesh with the sugar/butter mixture.

i took the quick cook advice of another reviewer, 5 minutes in the microwave and then 20 in the oven. Perfect. My husband said he would eat it again tomorrow night... and he has never been a squash fan!

I zapped it in the microwave and then put it in the oven. Very tasty although it was very sweet, so I would serve it with some not so sweet foods.

Don't be afraid to try this in the microwave. Place both halves in a shallow dish, cover tightly with saran wrap and microwave on high 6-8 minutes. Turns out just fine without heating up the house.

I love this recipe! I took the advice of some other reviewers and tried using the microwave. I have to say that squash roasted in the oven tastes sooooo much better... I guess I like that slow roasted flavor the oven gives the squash, sort of carmelizes the sugars more I guess.

Yum! My husband had never had acorn squash before and was a bit skeptical, but we both loved this. Maybe our squash was larger than average, but we decided it could've used a touch more butter and sugar-maybe fill the hollow all the way.
