  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, beat together butter, brown sugar, 3/4 cup chopped pecans, and vanilla until well blended. Combine flour and baking powder, and stir into the butter mixture. Shape dough into 1 inch balls, and place onto ungreased cookie sheets. Flatten cookies slightly to keep them from rolling off of the pan, and pinch the tops to a point to resemble acorns.
  3. Bake for 10 to 12 minutes in the preheated oven, or until firm. Remove from cookie sheet to cool on wire racks.
  4. In the top of a double boiler, melt chocolate chips, stirring frequently until smooth. Remove from heat; keep chocolate warm over water in the double boiler. Dip pointy ends of cooled cookies into melted chocolate, then into the remaining 3/4 cup chopped pecans. Allow cookies to set on waxed paper.

Very quick and easy butter pecan cookie, I also shaped them in a disk shape in my hand and baked them. They task like a Pecan Sandies.

These were a little too dry for my taste, but they did look pretty.

Super dry, tastes like plaster, a complete waste of ingredients. Yuck!

I'm trying to make these cookies right now and with the measurements listed I can't get the dough to be dough. It's dry and crumbly. I'm not sure what I'm doing wrong. I tried it twice and I have had to toss the cookie out. If you have any suggestions please let me know. This is the first year I'm trying to do Christmas baking and I can't afford to throw away ingredients.

WOW!! What a great cookie! My daughter loved it, my parents loved it and I ate way too many. On top of all that, it's elegant AND it's so easy to make.
