This recipe was delicious! Even my husband, who is a picky eater, loved it! I did have to change a few tings though for our families preferences. I added extra bacon, left out the celery and cilantro, since my husband wont eat them, and replaced tarragon with dried parsley and chives, since i didnt not have tarragon handy. I am giving this 5 stars because though I did make changes to the recipe I think this recipe could only be more delicious with the addition of the originally ingrediance, as long as you dont have picky eaters in your family like mine, haha. The previous reviewers do make an excellant point when saying the recipe takes much longer than 40 minutes. From begining to chop and prep everything to serving the soup took about 2 hours for me. So this is not a last minute meal, but when you have the time it is definately worth making!

This was really good. I substituted because I had no Celery and I had Mushrooms that needed to be used. The Potatoes I used looked to be Yukons of various shapes and sizes Maybe I only used 5 or 6. My stock was Frozen Turkey stock from a thanksgiving Bird I had maybe 5 mushrooms and I added a Chipotle. I didn't need any flour because it was thick enough. It would be glorious over egg noodles Heck a little Sour Cream and you have a potato stroganoff

I made this soup and its absolutely an ultimate potato soup. This is a soup you must try. I used turkey bacon.

I made this recipe twice and as written, I give the recipe 3.5-4 stars. It's a good starting point but the taste leaves me wanting more flavor. I modified the soup to increase the garlic to 6 cloves and I also added about 1 tsp of dried basil (alone) and about 2 tsp of Italian seasoning mix (blend of dried basil, oregano, rosemary, marjoram, cilantro, thyme, red pepper flakes). My family and friends loved the soup and I will definitely make the modified version again!
