This was delicious! I omitted bacon and added sliced kielbasa along with the potatoes. Didn't add the herbs as I didn't have them. Used canned broth which worked fine. The flour/butter mixture became VERY thick very quickly after adding the cream, enough that I was a bit worried, but it turned out fine when added to the broth/potatoes. Rather than blending some of the soup I just mashed it a few times with a pastry cutter. Wonderful flavor and texture. Thank you for sharing this recipe!

I added a few chopped carrots in the beginning (saute with celery), and a handful of shredded cheddar at the end. I also substituted milk for the cream and did not blend much of the soup. I only blended a few cups to thicken it a little. Very popular with my entire family.

Scrummy. I found it a bit too thick, but otherwise it was delicious.

This is SOOOOOOOOOO good! My husband is a total meat and potatoes guy and bacon is no exception. The only changes we made was to add a can of corn and the whole 2lb package of bacon.

This was great. I doubled the recipe and used half-and-half instead of heavy cream. I was making it at my Dad's house a state away and I forgot the tarragon - it was wonderful anyway. Yum.

I added 2 diced carrots along with the celery and onion for more veggies. I also substituted lowfat milk and 2 more tablespoonds of butter for the cream, which turned out wonderfully. This was awesome!

This potato soup was pretty good once I doctored it up. I felt it needed a lot more salt than called for. I also used dill instead of cilantro on the advice of other reviewers. It was easy to make and came together quite well. It was a little too thick, so I ended up adding additional milk to the recipe. My only real complaint is that it doesn't do well as leftovers...it's the consistency of mashed potatoes and it needs to be thinned out so much when reheated, that it loses a lot of it's flavor. I'll make this again, because it was delicious, but next time I will add more liquid, less flour and prolly add some carrots and corn. I'll be making it to send with my hubby for hunting season! Thanks for the recipe!

This soup is a cold weather staple in our house. Only thing i do differently is leave out the bacon because i don't like the way it gets soggy in the leftovers. Also I add just a bit of fresh dill instead of cilantro.

This soup is so GOOD!! I made it for my daughter, SHE'S 13 & VERY picky, so I left out the herbs. She thought it was YUM! I cut the recipe in half (love that feature on this site!!) I used half yukon gold & half russet, the yukon melt & the russets were cooked perfectly. I used the yukon so I wouldn't have to puree. It worked great!! Next time I might try it with thick cut pepper bacon & leave 1/2 out for a crunchy garnish. MMmmm I loved this soup!!

i really loved it! It really didn't take that much time to make it, and the taste was wonderfull! I made my chicken stock from scratch and added more stock to make less thick, but i definately give two thumbs up for this!

I have tried a lot of potato soups on this site and this is by far the best! The flavor is just exquisite! I did end up using more chicken broth than called for. It was kind of an accident because I had homemade broth and didn't realize until later that I had used 10 cups instead of 4. After reading the reviews though, I would recommend it. It wasn't super thick. Just creamy! Oh, and use whatever herbs you prefer -- it won't matter, it'll still be good!
