Very good soup. I didn't have any heavy cream, so I used evaporated milk, that was the only change I made. Thanks for sharing.

I made several adjustments to this soup since I am vegetarian, I used a 'no-chicken chicken broth' no bacon, and Silk Coffee creamer plain flavored. I also used the small golden onions whole to saute and simmer in the soup, I also added carrots and dried shittake mushrooms. The carrots gave it a slight sweet taste, which was delicious and the mushroom were good as well. I pureed about 1/3 of it and it worked well. The flour didn't mix well with the creamer, so I ended up removing it, next time I will either try using soy flour or none at all.

I have looked through many recipes for potato soup, but the name save it all. This is absolutely the ultimate potato soup. Don't be tempted to leave anything out. It all comes together in the end. My one suggestion for the bacon, is to cut it up in small chunks first with kitchen sheers, and then brown it to a crisp. When it's time to add it back in, I only add in half, and reserve the other half to spinkle on top when serving, along with shredded cheese and chives. If you can find chicken stock instead of broth, use it. It has so much more flavor! It takes a lot of time to prepare this, but it is so worth it!

This recipe was exactly what I was looking for. I used leeks instead of onions because I had some that needed to be used up. And I used fat free half and half instead of the cream. As another reviewer mentioned, I live in the southwest and cilantro is in everything, and it was not the flavor I wanted in my soup, so I used a bit of thyme instead. My family loved this soup, and the leftovers tasted even better when we ate it for lunch the next day. Thanks for the recipe, Karena!

Excellent. Only changes I made was to use half and half instead of heavy cream, dried cilantro since I had no fresh and no tarragon since Husband doesn't like. What a great recipe! Thank you!

My family and I just loved this recipe. I used whipping cream which I'm not sure is the same thing. It turn out great. My daughter loved helping me make this, and it didn't hurt that she loves bacon. I didn't know what tarrigon was, but it tasted really good in the soup.

Made this for a party with baked potato fixings (crumbled bacon, shredded cheese, sour cream, chives) and people loved it. I served it in a crock pot so it stayed hot the whole time. Every drop was gone by the end of the night.

LOVE IT! Didnt use cilantro, I live in Phoenix and everything has cilantro! It gets old for me. Im sure it is good with it, but I just wanted a good comfort food that reminded me of back east. So easy and so de-lish! Thanks for sharing!

To reduce fat & calories, used precooked bacon in package (bacon bits aisle, but NOT bacon bits), saute celery, onion, bacon & garlic in 3 tbl's of light butter. Used fat free half n half in place of heavy cream & used FF chicken broth. Cut the calories & fat by almost half and the flavor was still great! After serving in bowls, topped with green onions and a little 2% ched cheese! (if want thicker soup, use a little corn starch & milk)

This is the recipe that made me stop hating potato soup. I made it for my Dad, and after he had tasted it, he said, "You know, when I was watching you make that, I didn't think it would be worth all the trouble, but it sure is!" DON'T leave out the tarragon or the cilantro - if you do, you just won't know what you're missing! I get Tarragon in a 5 g container from McCormick or Best Buy for .89 to 1.19 - much cheaper than the fancy stuff in the glass bottles.

This is a great recipe for potato lovers out there. I didn't have bacon lying in my fridge so I sauteed bacon bits in the butter instead. It still worked. I love how I could taste the bacon with the potatoes in every sip.
