Great Chicken Salad

Two things are great about this chicken salad. - the texture and the mayonnaise/coleslaw dressing with its splash of lemon. Everything goes into the food processor and when it emerges, it only needs a bit of salt and pepper to taste. Make tea sandwiches, stuff celery or pile on fresh greens. 

Sweet Pepper Balsamic Bean Salad

Balsamic vinegar and Worcestershire sauce do their thing in this terrific salad. It 's colorful too. Black beans, red tomatoes, yellow peppers and green parsley to boot.

Yummy green feta salad, great for summer evenings! Add as many fruits and vegetables as you wish - I usually add pears or tangerines depending on the season.

Pepper Salad

Let 's see, there are peppers, peppers and still more peppers in this quite yummy broiled pepper salad. In fact, there are a dozen or so in assorted colors - green, yellow, orange and red. The strips of pepper are tossed with garlic and lime juice and broiled until soft, fragrant, and almost charred.

The ingredients in this salad are so tangy that no salad dressing is needed, keeping the salad light - just how it should be. The sweetness of the red bell peppers complements the feta and cracked pepper so well. Has a kick - great for pepper lovers!

I made up this recipe for a cool summer dish to take to a picnic. I just threw together things I had on hand and it became a hit! You may substitute your favorite type of bean for the garbanzos. Any firm bean will do. You may omit the jalapeno altogether. This salad will work as a main course and is very satisfying and colorful. The different tastes and textures are very pleasing. Serve cold.
