As others suggested, definitely double or even triple the seasonings (I tripled the hot pepper sauce because I like my meals with a bit of spice). I made this in the middle of winter so I used canned corn and tomatoes and it came out fine, but obviously it would be better with fresh tomatoes and corn. I do like how easily this came together. Although the flavor is nothing remarkable, it's an easy weeknight dinner.

This casserole was very easy to make and, while a little bland, was pretty tasty. I did double the hot sauce and the worcestershire.

My family loved this! I am no Martha Stewart and cooking is not my best talent ..... However, this recipe was so quick and yummy I had time left over for errands and looked like a great wife with dinner ready at the end of the day! I cooked the rice ahead of time in the rice cooker. I did add 2 cloves of garlic and some cilantro to the ground beef and onions while they were cooking ( I used frozen onions and frozen cubes of garlic and cilantro) I also added lots of Worcestershire and some gravy master too! Mixed in the rice with 1 1/2 c. mild salsa and 1 can of drained diced tomatoes. My biggest change to add some healthful value was subbing the plain corn for a frozen mix of corn, peas, green beans and carrots. I did not have any hot sauce so I used a small dash of ground red pepper. I mixed this all together and put in the fridge until I was ready to bake it several hours later. I then added cheese to the crackers and sprayed the top of the crackers with spray butter instead of using the 1/4 c. of margarine. This will be in my monthly rotation of meals and a winner every time!

Was too dry, and needed more seasoning. Next time, I will try with tomato paste or sauce instead of chopped tomatoes...and I'll def spice it up.....but a good start.

My husban told me it was a keeper, I found it dry, but very good with a good dullop of sour cream as per others reviews. I did use salsa, as I didn't have tomatoes on hand, this gave it more fav. and made the sour cream go even better.. This is very much like my Jiffy Supper recipe but baked.

Had this for dinner this evening. I followed a few other posters suggestions and upped the Worcestershire & hot pepper sauce. Mainly because I like those two ingredients . It turned out great! Everyone loved it and it was quite filling. Great meal to make on those busy nights!
