2 medium carrots, chopped
1 cup chopped cabbage
1 celery rib, thinly sliced
1 small onion, chopped
1 garlic clove, minced
2 teaspoons vegetable oil
3 cups water
1 (14.5 ounce) can Italian stewed or diced tomatoes, undrained
3 beef bouillon cubes
1 cup torn fresh spinach
2/3 cup cooked elbow macaroni
1/4 teaspoon pepper

DIRECTIONS
In a 3-qt. saucepan, saute carrots, cabbage, celery, onion and garlic in oil for 5 minutes. Add water, tomatoes and bouillon; bring to a boil. Reduce heat. Simmer, uncovered, for 20-25 minutes or until vegetables are tender. Stir in spinach, macaroni and pepper; heat through.

Nutritional Analysis: One 1-cup serving (prepared with low-sodium bouillon) equals 88 calories, 178 mg sodium, 0 cholesterol, 14 gm carbohydrate, 3 gm protein, 2 gm fat. Diabetic Exchanges: 1 starch.

Very nice, i used vegetable 'bouillon' cubes so that it was vegetarian. I used less pasta though, because traditional minestrones do not have much pasta in them.

Thank you Betty!!! This soup was awesome. I did add some red pepper flakes, for a little kick. My fiance, who is from a very traditional Italian family was amazed. He even said it was the best Minestrone he had ever had. He has been talking about it since, and would have no problem eating it today, even if it is 80 degrees out. Thank you so much, I will definitly be making this one again.

Everyone in the house loved this recipe! I added some ground beef, being that I have 3 grown men to feed, and they ate all they could and took the rest to work with them the next day.

This soup was fast, flavorful and economical. Can't ask for more that that! I doubled the recipe, used Ditalini pasta (we don't like elbows; Acini di Pepe, Orzo or even Alphabets would work well, too), added a can of Cannellini beans for a heartier soup and topped it with Parmesan cheese. Served it with heated Italian bread, a tub of butter and a fruit bowl. In all, a very satisfying meal.

The kids really liked the soup. Elisa was not to crazy about the spinach. We had bread on the side. Mozzie cheese on top was delish!

GREAT! I was unsure about the macaroni noodles but they turned out wonderfully. Because I made such a large batch I cooked the pasta separate and added just enough to each bowl. That way the pasta wouldn't get swollen and mushy for the next meal. I was out of beef bullion so I used chicken broth. So good and really healthy!
