Directions

  1. Heat oil in large skillet on medium heat. Add chicken; cook 3 to 4 min. on each side or until done (165 degrees F). Meanwhile, combine tomatoes, mozzarella, 2 Tbsp. Parmesan and basil.
  2. Add reserved tomato liquid to skillet. Top chicken with tomato mixture; simmer on low heat 5 min. or until mozzarella is melted and tomato mixture is heated through.
  3. Transfer chicken to serving plate; top with crushed croutons and remaining Parmesan.

Yum! Actually used leftover rotisserie chicken and came out delicious. Super simple. Left off crushed croutons.

Hubby said this was really good and both kids ate the chicken with the tomatoes taken off. I liked that it was quick and I had the ingredients.

Really good!! the recipe didnt call for any seasoning on the chicken, so I was nervous.. but still tasted good.. i think next time i would add some itailan seasoning to the chicken when cooking it!.. But I served this with sauteed asparagus and a baked sweet potato, delicious! My husband loved it!

I made this using tenderized chicken breast and my son and I both loved it. I did season my chicken with salt, pepper, and Italian seasoning though. I also baked my chicken in the reserved tomato juice instead of cooking it on the stovetop. It took a little longer, but it gave the flavors time to penetrate the chicken.
