1/4 cup Dijon mustard
2 tablespoons fresh lemon juice
1 1/2 teaspoons Worcestershire sauce
1/2 teaspoon dried tarragon
1/4 teaspoon pepper
4 boneless, skinless chicken breast halves

DIRECTIONS
Combine the first five ingredients; spread on both sides of chicken. Place chicken on plate. Marinate at room temperature for 10-15 minutes or for several hours in the refrigerator. Grill, uncovered, over medium coals, turning once, for 10-15 minutes or until juices run clear.

If you don't have a grill, this marinade is also good for baking chicken in the oven. I put the marinade in a ziploc with frozen chicken and let it thaw and marinate overnight. The next day I put it all in a pan, wrapped the chicken with turkey bacon, topped it with cheddar cheese, and cooked it at 375 for about 30 minutes and then broiled for 1 or 2 mins to make the bacon crispy. Served w/baked potatoes & green beans. Good stuff.

I chose this tonight because I didnt have a lot of time, and it sounded good. But before I started cooking it I read the reviews. So I figured I had to modify it a bit so... to cut back on the "tang" of it I added half a packet of powdery Ranch dressing & a couple splashes of EVOO.. I think that helped it a lot because it was delicious! My kids devoured it. I was worried they wouldn't like the dijon, but no one mentioned mustard at all! I also used chix tenderloins instead of breasts so the 15 mins or so I let it marinade was fine. If you use big breasts, I'd say at least an hour. I also just used my handy dandy indoor grill. (just throw it in the dishwasher) Served with baked beans (leftovers I had to use :) and carrots. Good quick chicken dish! Thanks for the idea!

This was great, the chicken was very tender. I baked the chicken in the oven at 375 and the only thing I would suggest is to not try to get all of the mustard marinade into the pan if cooking in the oven. I put all the marinade in and it tasted mustardy. But still good!

I enjoyed this quick chicken meal. The marinade was fast to make and had the ingredients on hand. Nice flavor to the chicken with little fuss. Thanks to the reviewer who suggested to bake it in the oven since I don't have a grill and would have been put off on trying this one. Thanks

I thought this was a fantastic marinade. MY boyfriend and I love it, and we're having it for our anniversary dinner tonight. Anyways, I cooked it for 30 minutes at 375F in a tinfoil pouch, and it tasted wonderful. Really easy!

Wow, this is really tasty with Natalie's addition of the turkey bacon. I prep everything in the morning right in a glass baking dish, cover with plastic and pop in the oven in the evening. Don't leave out any of the ingredients, we tried leaving out the lemon once and it didn't taste the same. VERY good!

I found this to be a fantastic base recipe. I omitted the tarragon and instead added about 1/2 cup fresh cilantro, and 1/4 cup rice wine vinegar. I tossed the entire mixture into the blender and it was AWESOME. I marinated the chicken in it for about 4-6 hours and then baked some and grilled the rest. It was fantastic both ways. When I make it again I think I'll let the chicken marinate in it over night. It comes out very flavorful and very tender thanks to the vinegar. I hope those of you who like cilantro try my variations... you'll LOVE it!

I was in a pinch for a quick chicken recipe last night and decided to try this one because I had all the ingredients on hand. I was extremely pleased with the results! Suprisingly, the chicken had a lot of flavor with this very simple marinade. I think this is the easiest and fastest chicken dish I've ever prepared! I didn't alter the recipe at all!
