Diann's Chili Vegetable Soup

A melange of onions, celery, green bell peppers, cabbage, and kidney beans bring this chili to the height of flavor and enticement after a hard days' work. Tomato juice and vegetable juice cocktail add a boost of flavor.

This is a low-fat, high-protein recipe. For vegan, simply leave out the cheese. The variety of beans adds a nice touch of color, and it can be made as mild or spicy as you like it. Remember to recycle all those cans we used.

You're not going to believe how awesome this chili tastes and how easy it is to make. I make batches and take it to work for lunch for the week. It's really filling and very healthy. You can substitute the chili beans with kidney beans if you wish, but be sure to drain them if you do. It's even better the next day, and if you omit the optional cheese, it's vegan-friendly! 

Thirty Minute Chili

This is a great recipe for a quick four ingredient chili for those cold nights when the kids have hockey or any sport and you have to run around! Of course, adding cheese and onions if you have time will enhance this meal, as will saltine crackers. Enjoy!
