Hi, My husband and I are wanting to start a sourdough bread. He is a chef. I have been doing research online and have discovered that metal and plastic are really the only things you shouldn't store the dough in. I have been looking at bamboo bowls with a lid (is not an air tight lid, also read that should not be air tight lids). Is bamboo bowls ok to store the dough in or should it be glass or a cermatic crockery bowl. Please advise. Thank You so much, J & J Potts
