I'm baking brownie bites for a kindergarten class and I'd like to know if I should use wilton mini muffin papers or bake directly in the pan. What's your advice? I'd like them to look appealing. TIA

Use mini muffin papers. I have had them stick in the pans no matter how much I greased them. My mini muffin pans are not non-stick however.

Plus they are easier to hand out. There is the disposable paper problem, but it's been my experience that not all kids eat them when given to them.

Brownies, unless they're cakelike, will stick to the liners. I'd bake in the pan, but cut small & place in the liners then. I've used that trick with fudge & it helped tremendously with reducing sticky fingers. They eat right from the paper.

I grease the pans and dust with cocoa powder and they come out fairly easily.

I like BOOKMARKER's idea of baking them in the pan, but serving in the liners!

To be quite honest those mini muffins can be time consuming. It is also very easy to overbake in them leaving you with dried baked goods. I also think BOOKMARKER has the best method for this.

Great Idea! I love using the paper liners. I made larger brownies and placed them in cupcake liners for a Big BBQ. Everyone liked the idea. Especially, since a big trash can outside was available to throw the liners away after everyone gobbled up the brownies.

Be sure to use a plastic knife to cut them.

I always use papers...for 2 reasons. First, they guarantee none will stick to the pan, and second, they are just prettier that way!
