MichiGirl is looking for: (6 recommendations)
I have a whole pan of leftover Spanish rice. It is just plain red rice with no veggies or anything in it. My husband doesn't like rice in his burritos so I need ideas how to use up the rice. Gluten free if possible would be great since my son is GI. Thank you.

how about using it in a tex mex soup. or mix in some cooked chicken and veggies for arroz con pollo type dish.

This is yummy. I've added goat cheese in place of feta and it was yummy.

I have a Mexican Lasagna recipe - basically flour tortilla base layer, taco seasoned meat layer, layer with tortilla - layer rice maybe cheddar cheese to taste, layer frijoles (refried beans, I always add canned tomatoes with chili to beans about 2 part bean to 1 part tomatoes) repeat - till near top - last tortilla layer with salsa - bake - add cheese at end with maybe 5 minutes to melt cheese

My husband eats rice but I don't. I just store it in the freezer in small portions to add to his meat loaf, patties, etc. You can always freeze and use later.

Thanks everyone. I ended up making beef enchiladas with the rice layered in instead of tortillas. It turned out good. I still have more rice so will freeze it and try some of the recipes suggestioned later.

MichiGirl, that's a great idea. We usually have Spanish Rice as a main course (with ground beef, tortillas, refried beans, and a salad garnish) ... but I'm blessed with a hubby that loves leftovers.
