Good morning to my peeps and friends, I adjusted my recipe for Johnnycake muffins to just 1/2 cup of granulated sugar instead of 1 cup. I did not think they were to sweet with 1 cup so a half cup would probably be the best for those of you who prefer less sweetness. To be honest I am not into sweet things so I always prefer to use the least amount of sugar in my recipes.

Hi Rosebud, I put in one cup of sugar and the result is a very light muffin that is not overly sweet and has a very creamy texture with the light cream that I used in the recipe. It does not taste extra sweet to me.

Thank you Cheerios. I'm going to go with the 1 cup then. I realize you've changed it but I'd prefer to try it the way you made it first. I can always make adjustment if need be later. Have a wonderful day. Thank you for getting back to me.

Your welcome Rosebud, I think 1 cup of sugar is the right amount for a recipe like this one. The fact that corn is sweet is maybe what had the viewers in an uproar over my amount of sugar.

Cheerios, I just made standard corn muffins the other day. I believe they had 2/3 cup of sugar per dozen. It depends what type the are. In the US, Southern cornbread is not sweet. The northern type is sweet and moist, almost like something you would serve at the end of a meal. Some even put honey on top of theirs. It depends where one is from on the sweet vs non sweet concept of cornbread.

Thank you Blender Woman for your input on my recipe. I purchase the cornmeal from Bob's Red Milll products and I find it to be of the normal cornmeal variety that was not overly sweet when I tested some before adding the sugar to the recipe. I guess that some of you have a sweeter corn and should judge accordingly to how sweet the cornmeal is before making the recipe following my list of ingredients.
