How would Oat flour bake up if you substitute it for half of the Sugar Cookie recipe? Any one every tried to replace with another type of flour? What can I expect for holding shapes for a cut out sugar cookie? I have tried replacing half with fine whole wheat flour in several recipes. I like that.

Lea, I can't give a definite answer to your question, but I made cookies yesterday in which the recipe called for putting 2 1/2 cups of oats into a blender or food processor and blending to a "fine powder," which was like flour. This was added to other conventional dry ingredients such as all purpose flour, baking soda, etc. The cookies were some of the best I have ever made. So I think the oat flour would work for you. Here is the recipe I made. It was fantastic. (Urban Legend Chocolate Chip Cookies)

Oat flour will may make the cookie drier so add more fat or use less flour.
