Thanks for asking Petey. I was wondering what to make too. This looks good and easy nanny, and I might have to do it! Is it very sweet? Is it like a custard?

rich- but more of an ole custard- it is my favorite chocolate-i like mine plain with a glass of milk- but you could do whipping cream or meringue

Caramelised Apples with Ice Cream Everyone loves hot apple pie and ice cream! This dish is based on the same perfect pairing, but without the faff of making pastry. The ice cream is a doddle (no gadgets required) and the caramelised apples heavenly. A perfect treat to round off any supper Ingredients 4 cooking apples 1 lemon 8 tbsp golden caster sugar 1 litre/1¾ pints ready-made vanilla custard 50g/2oz butter 4 dessert apples Preparation method Put a medium sized oven tray in the freezer. Peel, core and chop the cooking apples and add to a deep pan with the juice of a lemon and four tablespoons of golden caster sugar. You can even leave the squeezed lemons in the pan. Pop the lid on and bring to a simmer for 10 minutes. A bit of texture is welcome in the ice cream so don’t let the apples soften to a purée. Tip the cooked apples into a large bowl, pour the ready-made custard over and fold together. Tip the mixture into the chilled tray and freeze for two hours, giving it a stir at the halfway stage. When the ice cream is almost frozen, peel and core the dessert apples and cut into segments. Warm the butter in a frying pan and add the apples with the remaining four tablespoons of golden caster sugar. Turn them occasionally making sure that all the apples are evenly caramelised, which should take 10 minutes or so. Serve the piping hot apple segments with the home-made apple ice cream.

Cranachan This traditional Scottish dessert of oats, cream, whisky and raspberries can only be described in one word ---- “FANTASTIC” Ingredients 570ml/1 pint Double (Heavy) Cream 85g/3oz Porridge Oats 7tbsp Whisky 3tbsp Honey 450g/1lb Raspberries Garnish: Fresh Mint Preparation method Toast the oats in a frying pan, being careful not to burn them. Lightly whip the cream until it reaches the soft peak stage, then fold in the whisky, honey, oatmeal and raspberries. Serve in dessert glasses garnished with a few raspberries and mint NOTE: Nick Nairn's New Scottish Cookery advises toasting the oatmeal with a half measure of sugar together to give a crunchy texture and caramel flavour. This is done either under the grill or with care in a non - stick frying pan using a medium heat and tossing often. Nick Nairn uses pinhead oatmeal and uses soft brown sugar. He also recommends tossing the raspberries in whisky and warm honey for an enhanced flavour. Once prepared he then drizzles any extra whisky with the warmed honey over the cranachan.
