Happycat is looking for: (10 recommendations)
Reading mention of super bowl gatherings reminded me I am invited to a potluck one; host is serving lasagna and someone else is bringing Caesar salad. Looking for an easy appetizer or dessert that would travel well in a car for the house is over an hour away. thank you for any ideas.

Fresh tomatoes, parsley, chives, garlic and basil create this beautiful, tasty dish. Add balsamic vinegar if you like. Serve on toasted French bread with pesto, or enjoy it all by itself.

What about this? Just mix up the tomatoes ahead of time, slice the bread and wrap in foil. Then when you arrive, you can toss the bread in the oven to warm and the guests can top their own. :)

Marinated mushrooms, zesty Havarti cheese, and cocktail rye (or bread of your choice), skewered on frilly toothpicks are a great, simple appetizer with little work and almost no clean up! You can marinate fresh mushrooms yourself, or dress them up right out of the jar.

I like this idea. You could make some with olives, cocktail onions, marinated artichokes to mix it up. I would just vary them with the meats and cheese.

A pretty strawberry dessert made with angel food cake and rich, creamy mascarpone cheese shows off its colors in a glass trifle dish.

One of our Pace® cooks uses both picante sauce and chunky salsa when making up her family's favorite appetizers--little taco-flavored treats wrapped up in wonton wrappers.

I brought these to a party...prebaked the shells for 2-3 mins and then added the mixture of meat and salsa, topped with cheese and took it like that with some pre-chopped green onions in a ziploc and a small tub of sour cream. Baked it for 5 more minutes at the party and topped immediately with sour cream and green onions. They were the first finger food finished on the appz table. :)

These give me yet another reason to buy a mini muffin pan. Saving this recipe.

As the name implies, roasted bell peppers are married in a simple red wine and garlic vinaigrette. This is lovely on sandwiches, tossed into a salad, etc.

Fancy twisted cheese breadsticks with that satisfying crunchy, buttery texture are easy to make because they are made with prepared frozen dough.

How about a tiramisu to go along with the lasagna?

Just imagine a cute display of penguins, made with black olives, carrots and cream cheese! You can add scarves and hats by using fresh red pepper strips, or canned pimentos cut into different shapes. Use frilly toothpicks if you can.

And maybe think about Chex Mix or Rice Krispie Treats. They're classics for a reason: everyone seems to like munching mindlessly while watching the game.

Warm cashews tossed in a sweet and savory mixture of rosemary leaves and brown sugar make a tasty snack.

These are delicious, but addictive. The good news is Costco has buckets of cashews (3 pounds???) for 15.00. Easy to make and won't make people feel stuffed before the lasagna comes out.

Great minds, keeker! I DO plan on making these for when my Super Bowl guests come over! I love these things.

I'm going to start saving glass jars for net Christmas. I've given my neighbors large trays of cookies for years, but the ingredients are getting too expensive. I think these will be more economical for me to make and let them put something different out for their guests to taste. That's my plan, anyway.
