Bean Burgers

Submitted by: EVENINGSTAR24
A fried vegetarian bean burger made with great northern beans. This recipe makes a lot, so stock up the freezer unless you are feeding a crowd. Serve in pitas or on hamburger buns with your favorite burger toppings.

I didn't have any veggie broth, so I tossed in a celery rib, half an onion, and a few baby carrots. Fingers crossed.

The recipe directions skip the step of actually cooking the beans, but I can't imagine making the burgers with "raw" beans.

It may be too late, but don't add salt until the beans are nearly cooked. Salt makes the skins toughen and it takes much longer for them to soften.

I have never made this kind of dish in my slow cooker, so it will be interesting how it turns out.

I think the salt is a myth. I read an Americas test kitchen article where they compared methods and tried it. I brined in salt water, drained and then cooked in fresh water. They were done in 30 min and very good texture.

Well, I soaked in plain water, but have already added salt to the crockpot. We'll see what happens tonight.

I also read the ATK article about salt and beans. Not only did they find that it did not toughen or delay cooking but taste testers preferred the beans that had been soaked with salt.

Salt is ok, but tomato of any kind is a no-no. It creates chemical reaction and will not let the beans ever get soft.
