Steak Soup

Rich, hearty steak soup has chunks of tender round steak, potatoes, carrots, celery, and corn, all simmering in a flavorful tomato-flavored beef broth.

I've made this using leftover prime rib. I lighten up on the tomato paste, usually use about half of what is called for.

I would trim any excess fat away (prime rib tends to have quite a bit) and then make some sort of beef soup, I am sure there are several on here or other similar cooking sites.

Hi, not a soup but different from US norm An old trad Scottish dish. hope helps. cheers.. Scottish Stovies Ingredients: Left over Roast Beef - diced or can use Chicken or Corned Beef - shredded 4 large Tatties (Potatoes) - partially boiled and sliced 1 Onion - thinly sliced 1 tbsp Dripping (from cooked beef) or Lard A wee touch of Beef Stock Salt and Pepper Add a wee bit of lard to a pot and gently cook the onions until soft; Add the beef or other and salt and pepper. Layer over with tattie slices and cover with the stock to taste (depending on how moist you prefer the meal); Suggestion - add a wee bit and top up as required. Simmer on the hob for about an hour or cook in the oven at 190c/380f/gas 5 for about 50 minutes.

I worked at a restaurant and they would make a spicy black bean soup with left over prime rib...its was soo good =)
