Hi all, we're going out of town to stay with relatives for Thanksgiving, and I am still supposed to cook a few dishes, so I'm looking for Thanksgiving dishes (mostly vegetable side dishes, but I'll consider others too) that I can make ahead or partially make ahead and freeze or refrigerate for a few days. Thanks!

2 cups cranberry Juice 1 (6 oz.) bag dried cranberries 2 dashes ground cinnamon 1 cup sugar 2 gala apples, peeled, cored and sliced 2 teaspoons corn starch Directions: 1. In a medium saucepan over medium heat, add the cranberry juice, cranberries, apples, cinnamon and sugar. Bring to a boil and let cook for 5 minutes. Add the apples and cook, stirring occasionally, until the cranberries have softened and apples are tender, about 5 minutes. 2. Remove 8 ounces of the liquid to a small bowl and whisk in the cornstarch. Slowly add the cornstarch-juice mixture (slurry) to the cranberry mixture, stirring constantly. Cook for an additional 5 minutes. 3. Remove from heat and pour into a serving bowl. Refrigerate until thickened, about 30 minutes. Remove the cinnamon stick and serve.

Crud I forgot to add that this is a cranberry sauce recipe that is GREAT for those that are not in love with cranberry sauces.

I've never made a green bean casserole...but I have eaten them and loved it!. It seems like it would freeze well.

Chopped broccoli, crumbly bacon, lots of grated cheese, and red onion are tossed with a lovely red wine vinegar and mayonnaise dressing. The salad needs to chill at least an hour or two before serving.

You can cook the bacon and onions ahead, as well as blanch fresh green beans and warm up day of.
