I have half stuffed one with a beer can...you can also put herbs and spices in the beer.

I usually put garlic, onion, rosemary, sage and thyme into the beer. and plug the neck hole with a chunk of onion.

I would say no. Only because there would not be much room to put stuffing in and also the stuffing would get steamed and probably be soggy. I do one of the other. If you want stuffing, you can make it and put it in a casserole dish in the oven.

I just don't think theres anything special about stuffing any bird, when you can create a great stove top from packages , that you add your favorite, meat, veggies or what ever , making sure you use good chicken broth to moisten. Haven't stuffed a bird in 20 years.

If you plan to stuff the inside of the cavity, I would say no. However, beer can chicken works best on your outside BBQ where the chicken tends to burn due to the high heat. Holding it uprigh makes it cook more evenly and being further from the heat source, doesn't tend to burn. I don't see a reason to hold the bird upright in the oven and I just cook in a roaster with a rack to hold it above the bottom of the pan.
