Hey again. In case anyone was curious. Made angel hair cabonarra with cubed ham steak, carrots, peas and grean peppers. Good to have a back up plan. Haha. Happy cooking to you all.

Gotta like angel hair pasta! The lighter the pasta, the lighter the sauce and accompaniments....shrimp, crab, scallops, EVOO, garlic would be my thoughts, but shaved ham (or bacon) with peas are something near "brilliant"...and I promise, I will never, ever, argue with "peppers" of any description in a pasta meal...Excellent reading! Wish I could be there with a fork and spoon!

Shredded spinach? Asiago or other sort of "salty" cheese? Southern or Northern Italia?

Salty cheese is always good in my eyes...anything cheese really. My fav tho is butter with olive oil and sea salt...whaaaa! I'll take it!
