Hi! This Georgia girl needs help in figuring out what to do with some fresh Hatch Chilies she received (Big Jims). I roasted and chopped some (are they supposed to be mushy?), roasted and froze some whole in plastic bags, and have a few left which are about 50%-60% red. What I would like is some sort of simple sauce to spoon over food (maybe with vinegar added?), but I don’t want it to have tomatoes in it unless that is necessary. So, any ideas on how to use these famous peppers (the simpler the better).

You could do an infused olive oil, I have never had a hatch pepper, so I don't know if you would need to chop it to release the flavor or if it is strong enough to infuse the oil whole. I was also thinking you could make a roasted red pepper sauce.
