I love to use frozen corn - when it's not its season- rather than canned corn kernels. But I don't know the right way to freeze it. Does anybody know how to do it? Thanks!

I'm so glad you asked this! I have a ton of fresh corn that I don't think I can use before it goes bad. They were 6 fora dollar :)

I just did a internet search for that and...Take a large kettle and bring water to a boil, add ears of corn just enough to cover with water . When the water returns to a boil, remove and submerge ears of corn in a ice water bath for about 1 min. Then cut the corn off the cob and freeze...very simple and it really works well. By doing it this way you are still keeping the corn sweet...ice bath locks in the flavor. I then added 2 cups of kernals to each freezer bag.

Carol has a great way but you can also do the same thing about blanching the corn on the cob, and then ice bathing. You can then take the corn and freeze on the cob if you want. I take them and put in a vacuum sealer, in packs of two and four, and then freeze them, and I have used them up to a year later and still just as good as when put up.

i just cut the kernels off of the cob and use my foodsaver. fresh corn all winter long!

Thanks Ed! I was hoping there way a way to keep it on the cob. I have 12 ears I need to do something with and can't wait to try this and go but more before they go off sale. I love fresh corn and miss it in the winter!

sweet corn recipe 16 c. corn (raw) cut off of cob 1 stick butter3 c. water 3 T. Sugar 4 tsp. Salt Boil 5 minutes cool to luke warm and bag, freeze. we have done our corn this way for many years, always yummy!!
