What is a good side dish soup? I have chicken out that I'm just planning on baking along with some rice. Our sinuses are acting up and we need something hot for our sore throats.

A great way to use leftover mashed potatoes! Milk and chicken broth complete the soup. Also can be made with fresh potatoes, and leeks instead of onions . Garnish with chives for an extra touch.

I love potato soup but was thinking something a little brothier might be better since we aren't feeling great. I have to go to the store in about an hour so almost anything goes. I just don't want to make plain chicken soup. My husband works outside so that's why I want it as a side dish bc its still 100 degrees here! If it was winter it would be the main dish. He just needs a little something to help his throat. Thanks though! I will save for this winter!

I'm going to text my husband and see if he likes egg drop soup. It looks good to me. I know he likes wonton so maybe I will make this and just put dumplings in place of the eggs. I didn't think of Chinese soups. Thanks Lisa!

Lisa we already have leftover chicken and rice. I only have one piece of chicken left so I am going to make more of that but only my husband really eats the chicken and rice. I mostly just eat roasted veggies and sweet potatoes or pasta. I'm not a big meat eater unless its a big steak in front of me :) he will eat the same thing every night and not care as long as there is chicken and rice. I change it up a bit but if I don't feel good I know that's all I have to make. Or he just has ramen lol

Hi Jess, If I wasn't feeling good this is the one I would make, this goes together in a snap...really, really quick, and easy. Tastes great. A couple changes I made was to not add all the tortellini at once only as I ate it because the tortellini sucks up all the broth, I add an extra bullion cube because I like the extra chicken flavor, use fresh spinach and real cheese..the cheese makes this so good. You will think you were cooking all day, I was impressed. Hope you are feeling better.

Using 2% milk gives this rustic soup just a little bit of creaminess without all of the fat. You can easily make it vegetarian by substituting the chicken broth with vegetable broth.
