I strongly recommend you get a complete diet guide from the attending physician. Once you have that, come back and let us know what ingredients they are recommending and what to stay away from and we can help you out! Good luck!

I strongly recommend a "caveman diet." I recovered from more than 20 different "incurable" medical conditions on that, including diabetes and diabetic retinopathy. In my case, I am intolerant of milk, grains, sugar, and chemicals. These foods were causing inflammation in my body, and numerous illnesses. You can check my recipe box for adaptable recipes.

A renal/diabetic diet is a highly specialized diet. I would use the Davite and Kidney.org sites linda2d listed above, or speak with a nutritionist who specializes in renal dietary needs. Things ordinarily considered "healthy" aren't necessarily healthy for someone who needs this type of diet.

Chicken enchiladas. Bake chicken breast with garlic powder and pepper, shred. Mix with sauteed onion and peppers if you like. Make this tomatoless sauce... http://allrecipes.com/personalrecipe/53416355/enchilada-sauceladybuggs/detail.aspx . Make your own chili powder without salt.. http://allrecipes.com/personalrecipe/63466891/chili-powder/detail.aspx . Dip tortillas in sauce on side, add chicken mixture, a little cheese, roll, place in pan with a little of the sauce on the bottom. pour rest of sauce over.

Beef stew without tomatoes...http://allrecipes.com/personalrecipe/62802199/beef-stew/detail.aspx . Use low sodium beef broth and anytime you use potatoes soak after you have cubed them) at least 4 hours to leach out the potassium, drain the water off.
