Making sauerkraut today, can red cabbage be used. Using recipe from this site.

I have not used it, but think it would work for taste. I don't know if the red would bleed out or not. I would try chopping some of the red cabbage up, and letting it set with ther salt. If the red bleeds out of the cabbage, then you would know. Which recipe are you using? Will you be putting anything besides just cabbage and salt in your kraut?

History trivia: Did you know that in WW1 And WW11 kraut was called Liberty Cabbage? Germans who lived in the US wanted to enjoy their cabbage, but kraut sounded too German. Using the word "liberty", they could prove loyalty to the US!

Decided not to use the red, I've never seen red kraut. Maybe I'll try a small amt like you suggested. Thanks
