Hi, lisa having a deserved long lie. Happy mamas and papas day all. Tonight these with fries, salad, and sauces. cheers. Burgers - Mediterranean Style Makes 4 to 6 depending on size 750g/1½lb Mixta - 70% minced Beef to 30% minced Pork or Beef Mince 1 clove Garlic - finely chopped 1 Spring Onion - finely chopped 4tbsp fresh Basil - finely chopped 2tbsp fresh flat leaf Parsley - finely chopped Liberal Splashes Worcestershire Sauce - to taste 1 Egg Yolk - lightly beaten 45g/1½oz Butter Salt and freshly ground Black Pepper Apart from the Butter, mix all ingredients together, season to taste and form into burger shapes; Place on shallow tray, cover with cling film and chill in the fridge for a minimum of 30 minutes before cooking; Melt butter in frying pan, add the burgers and cook on medium heat; When sufficiently browned on one side, turn over and cook steadily until meat just cooked through with juices running freely and clearly. Serve. If you want a healthier version can grill or barbeque without using butter but in frying pan it feels more devilish.

Pig Burger

Submitted by: Geoff Small
This is a unique burger, invented in Australia. The burger consists of: Grilled chicken fillet, grilled bacon, lettuce and tomato on a toasted foccacia bun, with herbed mayo on the base and guacamole on the crown. The burger got its name due to the strange range of ingredients. They taste fantastic, however you may need a few napkins to clean up afterwards, depending on the amount of guacamole.

Awesome Turkey Sandwich

A fantastic sandwich with sliced turkey, guacamole, toasted whole wheat bread, fresh tomato, lettuce, bean sprouts, yellow mustard and light mayo. For cheese lovers, Colby-Jack makes a great addition as well. No one I know can resist this one!

Good morning! I'll be back to work today, although I'm working 8-8 instead of 7-7. So I'll be home about 8:30. A turkey sandwich tonight, easy and quick. No guacamole or bean sprouts, though. I hate eating that late in the day; I may start making a diet shake for supper. Boring!

I'm hoping to not be, now. My hours are being split between the floor and outpatient (I'm an RN, if you don't know). I'll still be busy, but am hoping to get away from some of the heavier lifting, etc., of a med-surg floor. Outpatient just needs someone to fill in for vacations, but it'll give me a chance to see if I like it.

Lol. That's what is missing, Don-the light ale. I'll have to drop by a liquor store tonight.

I've always admired nurses! My first job while in high school was at our local hospital. I realized then the medical field wasn't for me. I can't stand the sight of needles! Hope your day flies by, Elle!

I've wanted 10 or 12 hour shift for-e-ver! They just won't do it for us )= It is a long day - but the trade off of more days off would be so worth it for me!

It sounds good, but usually I'm too worn out to enjoy the next day, and they don't schedule us on consecutive days. This week, I work Monday, Thursday, Saturday, then Sunday, Tuesday, Friday.

This cold salsa is light and fresh, with unexpected flavors of cucumber and cantaloupe along with salsa ingredients like lime juice and fresh cilantro. Serve alone, as a garnish for chicken or fish, or as a dip with chips.

Made this last night. Served with some straight from the box fettucini because I was worn out after making many, many stuffed banana peppers! Tonight I will add breadsticks on the side to soak up the extra sauce. The sauce was very good, but next time I'll leave out the salt. Happy Monday All. Off to work now!
