About 8 months ago we split a pig (well the meat anyway) with some friends, and it turned out to be very lean. We haven't enjoyed any of the meat much, and I am left with some bacon, and something call "pork ends"....any suggestions of recipes I can use these in to more slow cook/add flavor to beans/soups/etc, rather than just cooking them? I just don't want it to go to waste, but we weren't happy with them. TIA! I'll check back later.

Look up Osso Buco you could probably do something like that with your pork ends. It's an Italian dish. Hope this helps.

If the meat is too lean it will be dry if cooked in a slow cooker for a long time even with liquid added. I would still make one of these recipes, but cook for the least time possible.

I'd be looking at the soups and baked beans thing...Your problem with it might be that it was farm raised and not a carcass that a public butcher would accept, for one reason or another, and then trimmed too hard, and/or not hung long enough. Come to think of it, adding a bunch of pork fat and grinding into sausage and maybe smoking that might get you out of it...

Gosh you could smoke them and use them in beans or soups. You could chop them and put them in a fritatta.

would work great for split pea soup, lentil soup, white bean or navy bean soup. etc...

I don't think just raw "pork" does much to add flavor to dishes when added. If you want to use these pieces as seasoning meat, break them down to usable sizes (if they are big) and slow smoke them. The smoked meat and bones will add fantastic flavor to dishes all year long.
