Got country pork ribs in the smoker will glaze them with bbq after smoking, twice baked potatoes ready to reheat and macaroni salad tonight for dinner!! the only disappointment was the corn didn't look so great at the grocery store and the farm markets are not open yet :(

Oh and taking the last batch of peanut butter cookies out of the oven (temp was less than 85 today so am using the oven lol

Zucchini Cobbler

Chopped zucchini is cooked with lemon juice and spiced with cinnamon and nutmeg, baked in a crumble crust and served hot or cold.

The perfect, basic, never-fail recipe for pesto. Nothing more to say. Except, try marinating a butterflied leg of lamb with this before grilling. It 's sensational.

Ok! How's about 6:30? Monty's a bit bored this week, it's been way too hot for his regular walks. I'm bored too! I don't like extreme heat.

Hi, It's Saturday - waaay!!!! Tonight these but I'm going to try fresh white breadcrumbs as the coating instead of flour.

Spanish Salmon Burgers Sunflower Oil - for frying 450g/1lb fillet Salmon - deboned but unskinned 100g/3 ½oz Smoked Salmon - roughly chopped 450g/1lb Potatoes - cooked, drained, dried a bit and mashed with a little milk 450ml/15fl ozl Whole Milk Touch Lemon Juice and Zest - to taste 4 Spring Onions - finely sliced 1 Egg - lightly beaten Quantity of Plain Flour - for coating Burgers 1 Bay Leaf 1tsp flatleaf Parsley - finely chopped 1tbsp fresh Dill - finely chopped Salt and freshly ground Black Pepper Place the salmon fillets in a large saucepan, pour in the milk, add the bay leaf and season with salt and pepper; Cover the pan with a lid and gently bring milk to a low simmer; Simmer gently and poach for some 10 minutes or so or until the fish is just cooked; When ready, carefully remove the fish, transfer to a plate lined with kitchen towel; Remove the skin and break the fish into large chunks; Set aside and leave to cool; Mix the fish, smoked salmon, egg, spring onion, lemon juice and zest, dill and parsley together until well combined; Take care not to break up the fish too much; Add potatoes to thicken mixture sufficiently to roll into balls; Season to taste and roll into balls;

This is it! I've been through many recipes to come up with this one. Great for BBQ beef sandwiches. If you prefer plain rolls, omit onion ingredients.
