OK - I am hosting a dinner Saturday night. I am going to make a beef tenderloin. I have a salad and vegetable dish. Trying to come up with a potato Do you think twice baked potatoes are to heavy? - BTW - it has been in the 90s this week and will be in mid 80s on Saturday.

Do you also have a dessert? If the potatoes are very small and each person gets only half, I'd think it'd be OK--as long as the veggies aren't creamy. You could also do small roasted fingerlings in olive oil and seasonings.

Thanks Marianne...we do have a dessert, not sure what it is, as someone is bringing it. Salad and Green Beans Almondine for veggies. I was thinking maybe the fingerlings...

There is a restuarant here that serves these pan fried red baby poatoes with their dishes that would do well. You could do like one potato cut in half per person.

Can anyone remember like potato video from Chef John? If you could post the link here I think that would be an excellent choice with your tenderloin.

They look good! I have to get a cast iron skillet! (they are sooo heavy!). I will HAVE to make this for my FIL -- he is from England!

I vote Fingerlings with olive oil, rosemary, salt and pepper. NUMMY!! sounds like a great dinner to me!
