Basil, Tomato and Mozzarella Sandwich

This is a quick and refreshing no cook vegetarian meal. Basil, mozzarella and tomato on Italian bread. Great for those hot summer evenings when you don't feel like cooking.

Hi, a medley cheers. Malagueña Style Tuna Tapas 2 small tins Tuna in Olive Oil - mashed and retained in oil ½tsp Garlic - finely chopped 1oz Onion - finely chopped 1oz Green Pepper - to taste - finely chopped 1oz Red Pepper - to taste - finely chopped Touch finely chopped red/green chilli Garnish - Sprinkling flat leaf Parsley - chopped Salt and freshly ground Black Pepper Put the tuna and oil in a small bowl, add the garlic, onion, peppers and chilli, season with salt and pepper and combine thoroughly. Serve with crusty bread.

Lemon Slaw ¼ White Cabbage - finely sliced and finely chopped or roughly grated 1 medium Carrot - finely sliced and finely chopped or roughly grated ½ Red Onion - finely sliced and finely chopped or roughly grated 3 Radishes - finely sliced and chopped 2 to 3tbsp Good Quality Mayonnaise ½ Lemon - zest and juice Salt and freshly ground Black Pepper Put the cabbage, carrot, onion, lemon zest and radishes into a large mixing bowl; Add the mayonnaise, lemon juice, salt and pepper, all to taste, and stir well to fully combine together all the ingredients; Chill in the fridge until ready to serve.

Simple Bruschetta Baguette/Crusty Bread - toasted and cut lengthways into around 4 inch/10cm lengths Whole Clove(s) - Garlic - peeled Ripe Plum or Vine Tomatoes - thinly sliced or chopped Fresh Basil Leaves - torn Salt and freshly ground Black Pepper Optional - Parmesan Cheese - grated Rub toasted bread with garlic clove; Spread on the sliced/chopped tomato and season with salt and pepper; Sprinkle over with torn basil; Serve as is or with sprinkling of Parmesan over everything.

Gazpacho Hispaniola Easy to throw together, refreshingly moreish, this chilled soup has everything going for it. Ingredients 4tbsp Extra Virgin Olive Oil - plus extra to serve 1 litre/1.7 pints eight vegetable-based juice - such as V8 (available from larger supermarkets) 4 Spring Onions - sliced 2 cloves Garlic - crushed ½ Cucumber - peeled & chopped 1 small Red Onion - chopped ½ Red Pepper - chopped ½ Green Pepper - chopped 2tbsp Sherry Vinegar Salt and White Pepper To serve - handful small basil leaves, finely shredded Optional: small bag lightly toasted croûtons Preparation method Blend all the ingredients to a smooth purée in a blender or food processor and chill in the fridge overnight. Remove and stir in the basil To serve: pour the gazpacho into bowls, sprinkle over the croûtons, if using and garnish with a drizzle of olive oil.

Crusty Cheese, Apple and Jam “Sannie” Chunk Baguette or other Crusty Bread - sliced open Butter or Spread - for spreading on bread Jam - Strawberry/Raspberry/Blackcurrent/etc - for spreading Medium and/or Strong Cheese - Cheddar/etc - cut in thin slices 1 Dessert Apple - cut into slices Spread butter on both slices bread; Spread jam over both slices; Add cheese - to taste; Add apple - to taste; Press both slices bread firmly together and devour.

Valencia Orange Cake with Chocolate Ingredients 25oz Cream Cheese 6oz Biscuits (Cookies in American) 2oz Butter - melted 2oz Sugar 3fl oz Fresh or Quality Orange Juice 10oz Mandarins or Preserved Oranges Chocolate Shavings Preparation Smash the biscuits and mix them with the melted butter; Spoon the mixture into a baking tin greased with butter and chill in the fridge for some 15 to 30 minutes; In a separate bowl, beat the cheese, the sugar and the orange juice to form a smooth even mixture; Pour this mixture into the tin and return to the fridge for some 4 hours or so; Decorate the cake with pieces of mandarin and chocolate shavings.

There are a lot of summer soups out there and they are not hot soups either. I used to have one for blueberry it was so good. I have missed placed it over the years sorry.

do you have some leftover cooked chicken? you could make a great Chicken Caesar salad with this dressing. it is amazing!! If you have some leftover steak, you could do this salad dressing you don't have to marinate the beef. *** ***
