Ham Cake-ettes

Tasty ham and potato patties with green onion and Dijon mustard are rolled into panko bread crumbs and fried until golden brown. The delicious little cakes are a great way to use up post-holiday leftovers.

Hi, try these. cheers. Pea and Ham Risotto 75gr/2┬Żoz Butter 1 Onion - finely chopped 270gr/9oz Risotto Rice; 150ml/5fl oz dry White Wine 240gr/8oz frozen Peas - defrosted 120gr/4oz Ham - cut into cube sized bits 1litre/2 pints HOT Chicken Stock Salt and Freshly ground Black Pepper 60g/2oz Parmesan Cheese - grated Melt 50g butter in a large frying pan; Add onion and cook on gentle heat, stirring frequently, for some 3 minutes or so, until softened; Meanwhile, ensure hot stock is ready, simmering in another saucepan; Add rice to onion mixture and stir for some 2 minutes or so until rice begins to pop; Add wine, and continue stirring until almost absorbed; Add a little stock, stirring until stock absorbed, then add a little more and repeat the process; Stir often to ensure rice stays separate, always allowing rice to absorb the stock before adding more; After 17 to 20 minutes add peas, increase to high heat until boiling, then return low heat; After 20 to 25 minutes, rice should be moist and creamy but with still a slight bite; Add, ham, remaining butter, season to taste and stir until butter melted; Serve hot with grated cheese and crusty bread on side.

Special Fried Rice Ingredients 2tbsp Sunflower Oil 250g/8oz long grain Basmati Rice - pre-cooked and chilled 1 clove Garlic - chopped 2tbsp fresh Ginger - chopped 2 Eggs - lightly beaten 3 Spring Onions - finely chopped 120g/4oz frozen Peas - defrosted 60g/20z Mangetout (Snow Peas) - chopped 120g/4oz cooked Ham (or Chicken) 2tbsp fresh Coriander - chopped Salt and freshly ground Black Pepper 1tbsp Sesame Oil Preparation method Heat the wok until hot, add 1tbsp oil and over a high heat, add the spring onions and, stirring continuously, cook for about 1 minute or so until softened a bit; Add the garlic and ginger and, stirring continuously, cook for some 15 to 30 seconds until both heated through; Add the COLD rice and seasoning and stir fry for about 5 minutes; Add the eggs to the pan and, stirring continuously to ensure mixed together thoroughly, cook until they have set; Add peas and mangetout, mix in well, and, stirring continuously, stir fry for some 3 minutes or so; Add the ham to the mixture and, stirring continuously, ensure heated well through; Mix in the coriander and sprinkle over with sesame oil; Transfer to a warm dish and serve.
