Ham Cake-ettes

Tasty ham and potato patties with green onion and Dijon mustard are rolled into panko bread crumbs and fried until golden brown. The delicious little cakes are a great way to use up post-holiday leftovers.

5 star. This tasty morsel could easily be adapted for breakfast, healthier, faster, oven, etc. I topped that off with Bodacious Broccoli Salad, also 5 star. Been really busy the last while so not a lot of time for creative cooking :)

bd, on recipes like that, I save them in multiple places so that if I'm browsing my appetizers, they are there, and if I'm browsing main meals, bingo, there too.

HERDEZ® Creamy Tomatillo Avocado Salsa

Submitted by: Valerie's Kitchen
In a twist on traditional tomatillo salsa, this version uses Greek yogurt and avocado to add creaminess and texture. Serve with tortilla chips as an appetizer or as a condiment for grilled fish tacos.

Grilled burgers tonight and used this as a dressing on the burgers. I can't say enough about this recipe. Absolutely the best. As a dip or a topping.

Sounds delicious! I was glad to see this was canned tomatillo salsa, since I've never cooked a fresh one. My family loves Mexican, so I'll have to give this one a try. Thanks for the suggestion!

Actually it comes in a jar (no tinny taste) and you can understand all of the ingredients on the jar.

I can only find Herdez salsa and not the cooking sauce, emailed them and they gave me a store, but no one in the store knew what I was talking about. This really does look good.

Eating this for dinner at work, right now. Manchild's fiance made it for dinner. It's good - but she leaves out the crushed red pepper, because they're feeding little ones. I make mine spicier (= http://allrecipes.com/personalrecipe/62367302/creole/detail.aspx

It does that because this is a Taste of Home recipe. If you don't already have it in your recipe box it takes you to something similar. Here's a link to it. http://www.tasteofhome.com/recipes/cabbage-sloppy-joes

I made this sauce to use over leftover Olive Garden pasta. Also added mushrooms and broccoli. We ate this with steamed asparagus and last night's greens and fruits salad.

Pasta Salad

The veggies match the colors in the tri-colored pasta. And the dressing is real zesty and spicy. So when all three - pasta, veggies and dressing - come together, you have a festive, tasty and beautiful salad for six.

I made this with a shell pasta and leftovers of diced green pepper, diced tomato, sliced carrot, diced red onion, diced celery, sliced black olives, black beans and some canned artichoke hearts. It was okay, not great. I used an Italian dressing and I think a Greek dressing would have been better, but I got lazy and the Italian dressing was already made. A nice way to use leftover vegetables that are hanging out in the fridge.

This.. and it was good. I think a lot depends on how good the marinara you use... so use a good jarred one or homemade
