Lemon Slaw ¼ White Cabbage - finely sliced and finely chopped 1 medium Carrot - finely sliced and finely chopped ½ Red Onion - finely sliced and finely chopped 3 Radishes - finely sliced and chopped 2 to 3tbsp Good Quality Mayonnaise ½ Lemon - zest and juice Salt and freshly ground Black Pepper Put the cabbage, carrot, onion, lemon zest and radishes into a large mixing bowl; Add the mayonnaise, lemon juice, salt and pepper, all to taste, and stir well to fully combine together all the ingredients; Chill in the fridge until ready to serve.

I didn't... I thought we would have leftovers and I would take a pic of the pork mixture alongside some cabbage and carrots. But we didn't have much left at all! My fiancé doesn't have a very hearty appetite. He ate one tortilla and we shared a second one. So that means he really liked it! (I cooked half of a 24 ounce tenderloin. The other half will be cubed or diced and seasoned for taco salad.)

I made this for the Fourth [Does that count as the weekend? Friday and Saturday I was driving back and forth to AZ!] [AND, it's not dinner - but dessert (=] I pressed it in a 9x12 and cut it into squares, instead of making it into balls. We really liked this!

Oh, I'm still on the first sip of my first cup of coffee and didn't wish everyone a good morning. So, good morning, all! We had this (with some tweaks) on Saturday. Friday night we went to see The Heat and ate at Olive Garden.

And here is a minor off topic rant. We went to the matinee and are seniors, so paid slightly less for movie tickets, but then got one large popcorn and one large drink. We had Olive Garden's twofer and two adult beverages. So our dinner and a movie ended up costing $75!!!

Isn't the large popcorn close to $10? Concessions are where they make their money. Expensive to go out!!

The high cost is the reason we don't go out to the movies. Usually the DVR has several to choose from, or On Demand. Cable bill too high not to use it!

It's the same at this house. We don't go out hardly at all. We see a movie about once every 2 or 3 years. We rarely eat out. Too expensive!

Yeah, I think we need to do JUST the movie, with no concessions, or JUST the dinner out. And maybe lay off the adult beverages... LOL.

I did these chops since I often dry out the thick Costco ones. Marinated overnight and 6 minutes per side on grill and they were perfect. Got my chop mojo back!
