Cinco De Mayo Salad

Anchovy fillets are a surprisingly delicious addition to the spicy yogurt dressing in this mixed green salad with black beans, grape tomatoes, and fresh corn.

I am making this salad (again) for the 4th of July. I actually make it a lot. We love it so! This time though I'll be making for a crowd and I want to double or triple. Should I just triple the recipe or make separately in three bowls and then combine?

I know when it comes to baking, it DOES make a difference.

Hi my cutie Candice! For a salad that gets all mixed up with the delicious dressing, I wouldn't think it would matter. Do you have a bowl large enough to handle a triple recipe and room to toss it? I hope Savvy answers your question. We haven't "seen" her in a long time. Sending lots of sweet kisses and hugs to our favorite "OrangeCandy"!

Hello my dear sister-from-another-mother. I am wondering about the anchovies more than anything; well that and too many onions over-powering this fabulous salad. I do have a very big stainless bowl I'll be serving it in, so that won't be a problem. The other ingredients I'm sure will be fine. Thank you so much for your advice Cathy. Well, in my opinion, if you made the recipe three times in three separate bowls and placed in a large bowl to serve it would be the same as tripling it. If you are worried about the anchovies and onions make two with them and one without. Oh, heck what do I know?

Actually Brian, that's exactly want I was thinking. Leave out one-third of the onions and anchovies and make a triple recipe in one bowl.

I agree with Brian. If you are worried, triple everything but the anchovies and onion, just double them.

That looks like a really good salad. I think that goes to the top of my list. As for tripling it, it you like it making a single recipe (you like the amount of anchovies and onions) I'd triple everything for a big salad. Or set aside some of them for people to add if they want a stronger taste?

LOL! Brian, you crack me up! However, I (think) I'm a pretty fair cook, but heck when I get tripped up on these kinds of things and it drives me nuts.
