Epic fail!! Thanksgiving in almost July a NO - GO!! Worst bird I ever made :-(. Starting with I made it upside down (some recipes call for this right) and it ended up under cooked! Aggggghh. So we order pizza! So mad at myself!

Heather, why didn't you just put it back in the oven and jack up the heat? I've never cooked a turkey breast side down. The way my mother taught me, 425 for 20 minutes, with broth in the pan, uncovered. This sears the bird. Reduce the heat to 325, cover tightly with foil. No need to baste. Allow 20 min per lb. Perfect every time, for my family anyway, and loads of drippings to make gravy.

Chuck it back in the oven, breast up, and write it down that you have to give it more time. Then buy a meat thermometer.

Heather, I fully support your thought to start the bird breast side down, either suspended or an a greased wire rack. This exposes the dark meat to the heat first, as the dark meat needs to be heated to 175 or so, whereas you want the white to finish at 160. Mind, cooking like this presumes a fully heated oven to start off with, and maybe that's where you hit a rock today. When you pulled it, did you tent it and let it convect from the heat in the bones? With an 18 lb Tom, the temp should continue to rise another 10 degrees F or so, over around 30 minutes. I saw your post earlier, and thought you might be about 20 minutes light on time, but that "convecting" would take you out of that, but forgot you are at sea level, where things take a little longer because of the lower altitude...
