We are having caesar salad supreme from this site this Thursday. I want to make the dressing today and refrigerate until Thursday. Do you think this is okay or is it best to make it on the day we have the salad?

It will be fine in fact a couple of days in the fridge will allow the herbs and spices to mix well together I do it all the time.

It will be perfectly fine. It may be a little thick for you. If that's the case I have used just enough water to loosen it up as as much as I need it to be. and still tastes WONDERFUL!

Real Caesar dressing uses raw eggs. If your recipe does, be sure they are pasteurized. Even so, I would not let it sit around very long before using. Raw eggs tend to be fussy in dishes that don't involve cooking.

I make this dressing for our local Moose Lodge for their summer special salads and I make it once a week it does thicken up over night , also when using the jarred or canned anchovies it will be a stronger flavor than the anchovie paste in the tube but both are very tasty. this is one of the best dressing recipies i have tried and I have tried several and no eggs people freak out when they hear raw egg, good luck and enjoy
