Sigh. No one ate dinner lastnight except me. Schedules are just too "off" right now so I had pulled stuff out of the freezer & it needs to be eaten. Lasagna, Thai pork(which I had originally thought was chicken), plus I have leftover sausage gravy & biscuits, & beef stroganoff. They know if they don't eat it up, it'll just be on the menu for the next meal. No new food til the leftovers are gone. Seems to be a major problem around here lately. I just threw out a partial loaf of bread(moldy), grapes(shriveled), green onions, almost a whole bag of Cuties, along w/various leftover offs & ends that no one was interested in. Anyone else in a cooking/eating slump right now?

HERE! We had ceral on Monday night cause I was too tired to cook and I REFUSED to eat take out!

Plus, every time I cook it seems I have a ton of leftovers that get divided up to go in the freezer....just to be snubbed later & thrown out. Even I'M not into them. Poor hubby....all he wants is a sandwich to take to work & I keep sending leftovers with him.

When the humidity rises we don't eat much. So I've learned to have sandwiches, salads or cereal. I know how you feel Lisa. Been there and done that.

I always send leftovers to work w/ hubby, unless it's something that was amazing and we want to eat it the next day.

I gotta say, we have the same problem. I think we're leftover snobs! I'm constantly throwing food out... but maybe I need not cook for an army, lol!

Any cut of roast can be used for this. It cooks for 8 to 10 hours with baby carrots, onions, herbs, and condensed cream of mushroom soup.

I made these last night and ate a few then (had to get the chicken cooked!). I used milk instead of the butter (save those calories!) and they are a little dry and didn't brown as well as I would have liked. If I sprayed them with PAM before baking, do you think they'd brown better? Or if I'd used an egg instead of just milk?

I would think the dryness came from over baking. The browning part I wouldn't know since they are baked. Were they crunchy?

They weren't overly crunchy, and it was the bread crumb coating that was dry-the chicken was great. I'd just have liked them to look a little browner. The dryness was okay, as I dipped them in a combo of ketchup and mustard. Of course, if I'd followed the recipe, it probably would have been great. Lol. But I'm eating all of them myself, and 1/2 cup butter is a lot of calories!

The spraying may help, but I think that's probably why it calls for butter, for the moistness/crispiness.

Maybe try egg whites next time. I have a WW recipe that you dip the chicken in egg whites before the breadcrumbs and they brown nicely.

Hi, Happy Wednesday - I think. cheers. Today, try my new version of these again. cheers. Spanish Salmon Burgers Sunflower Oil - for frying 450g/1lb fillet Salmon - unskinned 100g/3 ½oz Smoked Salmon - roughly chopped 450g/1lb Potatoes - cooked, drained, dried a bit and mashed with a little milk 450ml/15fl ozl Whole Milk Touch Lemon Juice and Zest - to taste 4 Spring Onions - finely sliced 1 Egg - lightly beaten Quantity of Plain Flour - for coating Burgers 1 Bay Leaf 1tsp flatleaf Parsley - finely chopped 1tbsp fresh Dill - finely chopped Salt and freshly ground Black Pepper Place the salmon fillets in a large saucepan, pour in the milk, add the bay leaf and season with salt and pepper; Cover the pan with a lid and gently bring milk to a low simmer; Simmer gently and poach for some 10 minutes or so or until the fish is just cooked through and infused the milk with flavour; When ready, carefully remove the fish, transfer to a plate lined with kitchen towel and, if want, reserve the milk to make a sauce (e.g. Parsley); Remove the skin and break the fish into large chunks; Set aside and leave to cool; Mix the fish, smoked salmon, egg, spring onion, lemon juice and zest, dill and parsley together until well combined; Take care not to break up the fish too much; Add potatoes to thicken mixture sufficiently to roll into balls; Season to taste; Roll the balls in the flour coating each one evenly all over; Flatten into burger shapes to size you desire; Set aside on tray, cover with clingfilm and chill in the fridge for an hour or so; Heat oil in large frying pan, add burgers and cook on medium heat, turning to ensure golden brown on both sides, until fish just cooked through. Serve with tomato sauce, parsley sauce, hollandaise sauce &/or Lemon Wedges, Fries and a simple salad

Thanks, Elle, you too! I'm leaning toward the rice as well. I want brussel sprouts, but the guys won't eat them...I do have a fresh cauliflower to use up, so maybe I'll do that.
