Anyone have a really good blueberry coffee cake recipe? I am also willing to entertain another coffee cake recipe with a different fruit in it. I have a few really yummy traditional coffee cake recipes, but wanted one with fruit of some sort. Thanks!

Simple, delicious coffee cake recipe that my mom made for company. I took the basic recipe and added blueberries.

oh Molly that looks great! Buttermilk makes things so lovely! Do you use brown sugar for the topping or stick with the recipe and use granulated sugar?

Hi, direct from UK. cheers. Blueberry Coffee Crumble Cake Fresh blueberry cake with a delicious crumble topping makes this recipe a real treat. Preparation time: Less than 30 mins Cooking time: 1 to 11/4 hours Makes 1x 23cm/9in Cake Ingredients For the crumble topping 50g/2oz caster sugar 75g/2¾oz light brown sugar 1 tsp ground cinnamon 1 tsp instant coffee powder 150g/6oz plain flour 75g/3oz butter, cubed For the cake 250g/8oz plain flour 225g/8oz blueberries 150g/5oz butter, softened 150g/5oz caster sugar 3 free-range eggs 150ml/5fl oz soured cream 50ml/2fl oz strong espresso 1 lemon, zest only 1 tsp bicarbonate of soda 1 tsp baking powder 1 vanilla pod, split lengthways and seeds scraped out Preparation method 1.Preheat the oven to 180C/350F/Gas 4. Grease and line a 23cm/9in cake tin. 2.For the crumble topping, mix the sugars, cinnamon, coffee and flour together in a bowl, then rub in the butter with your fingers until the mixture resembles coarse breadcrumbs. 3.For the cake, sprinkle a little of the flour over the blueberries and mix together. 4.Cream the butter and sugar together in a bowl until light and fluffy. Beat in the eggs, one at a time, until well combined. Beat in the soured cream, espresso and lemon zest. Fold in the flour, bicarbonate of soda, baking powder, vanilla and blueberries. 5.Spoon the mixture into the cake tin, smooth the top, then sprinkle over the crumble topping. Bake in the oven for 1-1¼ hours, or until golden-brown on top and a skewer inserted into the middle comes out clean.

wow Don... looks good. Never considered how coffee flavor would be with blueberries. What is caster sugar? Is that the same as granulated sugar?

Hi, similar in US. I think also called superfine sugar or, in packet, C&H Bakers Sugar. Hope helps. cheers

Morning nanny. How are you feeling? I have this one in my recipe box. Looked it over before my post and decided it was a little too much with all the whipping of egg whites etc. Will try at some point! Thanks.... hope you are doing better hun!

lol ellie - want to make for my daughter-in-law when she brings my grandson over Wed morning. I have volunteered to start babysitting him. (I must be nuts... as if I didn't have enough on my plate, right?) We want to start getting him used to me... so they will be hanging out with me Wed and Thurs.

Just made a blueberry pound cake recipe that could pass for coffee cake well.
