This is a quick and easy throw-together salad that is super tangy and creamy and a way to use up some of your fresh garden veggies. Very refreshing! Increase or decrease amount of vinegar and mayonnaise to your liking.

Light, lemony and luscious are just a few of the ways to describe this incredibly easy dessert. Top with whipped topping or whipped cream for a fabulous dessert that no one will be able to resist.

BTW, this was NOT a hit at our get together. It WAS cooked thru & looked pretty but it was soooo sweet, a little to tart for my taste. I had 1/2 the pie leftover & no one even wanted to take it home. I ended up leaving it so don't have any idea what they ended up doing w/it. Maybe it's because I had to double the filling to fit into the crust?? IDK, just not the type of lemon pie I was looking for.

Sorry this didn't work, I hate wasting food! I looked at Key Lime Pie VII and it uses 3 cups sweetened condensed milk and 3/4 cup lime juice plus sour cream. Maybe this oe needs less juice and/or more sc milk?

When I made that Key Lime pie I accidentally put in too much sour cream, but my mistake made one of the best Key Lime pies I've ever had. Everybody was wanting the recipe, so I said to put in 3/4 cup of sour cream.

Well he says he feels better, looks pale and tired to me but I won't tell him that! He has been sleeping a lot which is probably for the best. When he is awake needing a pain pill, well, he is a pain. Only a couple more days of pills to go so we'll make it through!

Lisa, how much do you mash the lentils? I used a ricer and the back of a spoon. Should I mash them all the way like potatoes? I did not totally mash them and the taste was sooooo good!

I like these (assuming they are the same as the TOH recipe) and really don't mash them. I like the texture that way as it has a little more bite than say a bean burrito.

Cheryl hope it doesn't rain. Living in Florida I can't tell you how many times it has rained on a party. We have two of those Easy Up Gazebos for just that reason. They sell them at Walmart. Maybe they have a pavilion you can rent? Hope the party goes good, I know you've been working hard on this.
