Wondering if anyone can answer this question about Hickory flavoring/spice. I bought container with four different meat spice rubs at Aldi and absolutely LOVE the Hickory one. I'm not too fond of the other three, two are just OK and I don't really care for the Mesquite. Wondering where I might find a Hickory flavor to mix with some other spices to make my own rub blend. I checked Penzey's online and did not find anything. Ideas? Thanks in advance, I'm headed to bed now but will check in tomorrow.

I just did a quick google search for powdered hickory smoke and this came up, as well as many others:

Actually, Spice Island makes a Hickory Smoked Salt. I will have to try that myself.

I like to rub it on steaks, but prefer to not add salt until after it's cooked, so the powder seems like a better idea. What will you use the hickory salt for?

I'm not sure yet. Maybe a smoked tenderizing rub? Gosh, maybe on a roasted cabbage or onion. I don't know, the possibilities intrigue me!

Different woods for different meats. Mesquite needs a strong red meat like beef or lamb. Hickory is strong, but can do well with pork, or, on some uses, chicken. In short, this is sort of BBQ and smoking, something that AR doesn't really excel at, and you might want to look at BBQ forums to bring out the best results.

Hi chairlifter -- I was actually referring to duboo's response to using the hickory salt, not woods for smoking. Thanks, though, for trying to help.
