does anyone have low-carb recipes I can make for my 11-yr-old boy who loves carbs, and is gaining weight at an alarming rate? Thanks

Not sure how many carbs this would be but I make a chicken that is really good and healthier than some items. Take a chicken breast cut a pocket into it, then take some laughing cow cream cheese(i use the veg one). Stuff the chicken breast with the cr cheese. Then cover it in an italian dressing(I use a zesty italian) and bake. Its simple, semi healthy and yummy. (You can also add some spinach in it)

Unless a pediatrician or RD (registered dietitian) has suggested a low carb diet, be careful. Children at this age are still growing and may need closer guidance than just carbs. Many carbs are perfectly healthy and desireable (fruits for example.) Other things to be concerned are fat and calorie intake and lack of exercise. So I'd say to get some professional advice and let your son be part of the planning and preparing process.

I agree with lady bug. Rather then follow some fad diet, consult with his doctor first. Think about portion size of the meals he is eating, what he eats during the day and how much exercise he is getting.

Just an fyi, my oldest son just went thru this weight gain at the same age. It lasted for about 2 years & then UP he shot & he went from a husky to a slim(I swear) overnight. I did start decreasing his serving sizes gradually(say, I'd send 8 crackers as a snack, I started sending 7...a couple weeks later I decreased to 6) & limiting the sweets, pop, etc. He was/is a carboholic also. Since obesity runs on my side of the family, I'm very cautious about how we handle weight, food issues. We talk "healthy" instead of low carb, low cal, & NEVER say "diet". I can't tell you how many diest my whole family was always on growing up...& how many my mom put me on as a kid. It caused emotional stress & always made me feel horrible about myself.

This is about as close as you will ever get to mashed potatoes and till be something else. It is rich and satisfying and, best of all, you know exactly what is in it.

Agree with everyone else--but here's a recipe collection: You can also replace spaghetti noodles with zucchini, and lasagna with zucchini or eggplant slice.
