I've been blessed with DD's leftover food. I have an open package of flaked coconut. We almost never use coconut and I'm trying to watch calories....any ideas for something not too caloric?

linda2d ... I often forget too. I make it when I make it and it keeps in the fridge nicely. Sometimes I make it in the afternoon or around dinner and have it the next day or the day after.

thanks! I am a little new to steel cuts so I don't really experiment for fear of ruining something. I think I'm going to try that method.

Thanks, Nadine! We aren't fond of seafood, but it's a thought. I'll have to see who might be over this weekend & whether they like shrimp.

Probably shouldn't make it....but I might! I think it'd be great as mini cheesecakes if we have company, if they're solid enough. Otherwise we'd eat them all...we love Almond Joy and Mounds Bars (esp the dark chocolate ones). Thanks again, Nadine.
